There are times of the day, specifically between lunch and dinner when my tummy isn’t too happy. It’s slightly full from lunch but empty enough to make dinner seem all too far away. This is when I start reaching for unhealthy snacks or start making hunger-driven dinner plans!
So I try to eat a light vegan meal that’s not too heavy and won’t make me too full for dinner either. Sometimes I make a large batch so I can store it in the fridge or freezer for an easy lunch the next day. These are also perfect for a hot day when you want something refreshing!
